<p class="first-child "><span title="W" class="cap"><span>W</span></span>hat happens when you put a blackberry and a raspberry together? Thanks to Scottish botanists, we now know that the answer is the tayberry. This berry is a very large, dark reddish to purple berry.</p>
<p>First cultivated in Invergowrie, Scotland by Scottish Crops Research Institute botanists David Mason and David Jennings, the tayberry is a blackberry-raspberry cross, which bears fruit in mid to late summer and tastes wonderful eaten out of hand or cooked.</p>
<p>It both tastes and smells just like a blackberry. Taking a bite into one, you may notice that there is a slight tart flavor to it. There is more then one way that you can enjoy this wonderful meticulously merged fruit.</p>
<p>A tayberry makes a great pie, which is a wonderful change of pace and is welcome at any late summer picnic. You can make tayberries into a deliciously tart-sweet jam, which makes a great sandwich or toast topping. </p>
<p>Tayberries are great in a bowl of ice cream or yogurt and are equally good in a fruit salad or mixed into jell-o. You can use tayberries just as you would use blackberries or raspberries. Even eaten as they are, they are a treat. Try them in cereal, scattered on top of a cheesecake or freeze them and add them to smoothies! No matter how you use tayberries, you are certain to enjoy them.</p>
<p>Tayberries are also used to make a wine. The wine features a brilliant ruby red color and a taste with just the right amounts of sweetness and tartness. It makes a great pairing with strong cheeses, red meat, and game. The wine makes a great gift and at only about $15 a bottle, a very affordable one as well.</p>
<p>Besides it&#8217;s one of a kind flavor, the tayberry also contains a lot of nutritional value. Tayberries are a good source of vitamin C, bioflavonoids, folate, and fiber. The tayberry fruit and leaves are also employed as a home remedy for diarrhea. </p>
<p>There is another old home remedy and that is to chew on the leaves to help cure bleeding gums. They say that they have faithfully adopted this in Scotland over 2000 years ago. It is still common today as well.</p>
<p>Tayberry can be used for many things from home remedies to food and wine. Definitely a different type of fruit and surely delicious you will be amazed at how many things you can make with it. Although tart in nature, many have used it to make pies, jams, and pudding. Sure there is a lot more that you can find in such an exotic fruit. It is really only limited by your imagination.</p>

So, what do you do when you want to give someone a gift for their Birthday, or for dog-sitting, or Christmas, or Valentine&#8217;s Day, or any number of times when a small gift would be appreciated?  </p>
<p>When the budget starts to suffer, we start to rethink giving gifts.  Yes, we want to show our appreciation to the people who support us and love us, but we just don&#8217;t have the money anymore.  The answer goes back to the old days: giving a gift from your heart, using the talents you have, and you will never go wrong.</p>
<p>One of the most enjoyable gifts I&#8217;ve ever given is a gift of chocolate.  Whether it&#8217;s homemade peanut clusters or fancy chocolate covered cherries, everyone seems to be enamored with their little boxes or bags of beautiful, and delicious chocolate goodies.</p>
<p>Making chocolate treats isn&#8217;t as difficult as it may seem.  You&#8217;ll need just a few simple supplies, a little practice, and you&#8217;re on your way.  Once you get good a making a few treats, your family and friends will look for them with great anticipation.  This particular chocolate treat is really great because no one will think to make them just for themselves.</p>
<p>Chocolate Dipped Coffee Spoons</p>
<p>There&#8217;s a delicious connection between coffee and chocolate, so this gift is a natural for any coffee drinker on your gift list.  Man or woman, if they drink coffee, they&#8217;ll love this gift.</p>
<p>Start with this list of items:</p>
<p>Purchase some heavy duty plastic spoons.  You may even wish to check out some flea markets or thrift stores for silver spoons that are pretty.  Either way, make sure they&#8217;re nice and clean.</p>
<p>In the grocery store&#8217;s baking aisle, you&#8217;ll find blocks of milk chocolate coating.  That&#8217;s what you&#8217;ll need for your spoons, not the Real Chocolate.  Real Chocolate tends to be harder to control, and will not stay shiny if it&#8217;s not handled exactly right.  The chocolate coating is much better, and actually tastier, than the Real stuff.</p>
<p>Candy sprinkles or crushed peppermint candies may be a nice addition if you want to make your spoons even fancier.  You may consider flavor additives like peppermint oil if you think your gift recipient would like the flavored chocolate.</p>
<p>You&#8217;ll need to cover cookie sheets with parchment paper so the spoons won&#8217;t stick while cooling.  Don&#8217;t use waxed paper as the chocolate will stick and you&#8217;ll have a mess.  Parchment paper can also help the clean up if you&#8217;re working on a larger number of spoons.</p>
<p>I recommend that since you&#8217;re giving a gift of food, buy the proper wrapping.  Look in your candy making section of any craft store for clear cellophane candy bags in a size to fit the spoon, leaving some of the handle sticking out.  You&#8217;ll also want to find some ribbon and raffia to tie the package closed and to decorate the gift.  </p>

<p>Put a big pot of water on the stove and bring it to a boil.  Carefully chop up your big chunk of chocolate into little chunks and put in a small pot that will fit in the big pot.  When the water in the big pot comes to a boil, shut it off, and very carefully place the small pot in the hot water.  Don&#8217;t let your water run over into the small pot with the chocolate.  After the small pot sits for a few minutes and you see the chocolate start to melt on the edges, take the pot out of the water and begin stirring the chocolate with a big rubber spatula until it&#8217;s all melted.</p>
<p>When you are done stirring the chocolate, dip one spoon at a time in the melted chocolate and lay each one on the parchment paper you have on your cookie sheets.  If you plan to decorate the spoons with other candy, do it while the spoon is still wet. Otherwise the candy won&#8217;t stick. Then move on to the next spoon, dip, decorate, and so on.  Once all of your spoons are done, take your cookie sheet to a cold, preferably dry place.  A refrigerator or freezer is okay to just get them set up a little, but don&#8217;t leave them in that moist environment for more than a few minutes.</p>
<p>Once the chocolate has set up, you can put each spoon in a candy bag, and tie a piece of ribbon, raffia, or what have you around the handle of the spoon to close the bag.  Now you can add a little extra ribbon, a candy cane, or any other decoration you&#8217;d like.  If you are giving more than one spoon to someone, be sure to put them in a candy bag first, then place all of them together in a pretty bag or box. </p>

After all, &#8217;tis the season for a bit more &#8230; shall we say enjoyment of treats than usual? So go ahead and have some fun decorating those cupcakes - and of course eating them! </p>
<p>- Sprinkles are just about the easiest way to go, any time of year. For quick and simple, yet festive Christmas cupcakes, all you need do is bake up a batch of cupcakes (from scratch, or if you&#8217;re really in a time crunch, use your favorite mix.) Then, top with green, white, or red frosting; toss on some green and red sprinkles, and you have quick and easy Christmas cupcakes.</p>
<p>- Let it snow - this one&#8217;s another easy, fun and simple timesaver. All you need is a batch of your favorite cupcakes, white frosting (or green, or red if you prefer) some powdered sugar and shredded coconut. You get the idea - slather on that frosting, top with coconut, dust w/powdered sugar &#8230; sleigh ride, anyone?</p>
<p>- Draw Christmas trees on your white-frosted cupcakes, using gel icing (available in tubes, in a variety of colors) from most grocery stores. Form basic triangles in making your Christmas tree shapes; wavy lines or straight work best. If you get truly inspired, try other shapes (bells, stars, etc.) as well!  </p>
<p>- Not just for Christmas parties, but any occasion - start with a collection of different colored frosting, then make a gift-wrapped present on top of each cupcake. Try miniature candies (like chocolates squares) for your &#8220;boxes;&#8221; different colors of licorice (red is good) form your bows. You can get very colorful and imaginative with your &#8220;packages&#8221; - finish them off by adding gift tags with names, and you&#8217;ve got personalized party favors!</p>
<p>- More fun in the snow w/out the frostbite &#8230; your kids can help create as well as &#8220;scarf&#8221; down these delicious snowmen. Atop your frosted cupcakes (white icing preferred) place a large marshmallow, followed by a small one, and insert a toothpick vertically, right down the middle (to help him stand up.) Use small candies to craft his face, attached w/a tiny bit of icing &#8230; maybe even a straight pretzel for arms &#8230; now everybody sing: Frosty the Cupcake was a yummy, happy treat &#8230;</p>
<p>- The Polar Express has nothing on us - create individual train cars, starting with Tootsie Rolls or other treats of same basic shape and size (you might need to do some trimming, such as with fruit leather or licorice.) Round candies - most any kind - are good for your train&#8217;s wheels, and try black licorice strips for the tracks. Try &#8220;engineering&#8221; a true train-like formation on a long platter with multiple &#8220;cars&#8221; in a row - what a festive centerpiece!  </p>

While you do not have to eat 106 gooseberries a day for this kind of benefit, a few can really help.</p>
<p>Similarly, gooseberries also carry high amounts of vitamin A and vitamin C, a healthy portion of which is essential to healthy function. Whether it&#8217;s the fruitcake, holiday cookies, or a pumpkin pie, they all seem to bring back memories of home and family. It could be though that our classic desserts are really due for fresh ideas. Here are just a few creative variations on some classic holiday desserts.</p>
<p>I&#8217;ll start with pumpkin pie since it&#8217;s not always been a favorite of mine. When I came across a great variation on this dessert I was really happy. It uses pumpkin ice cream as the filling instead of pumpkin puree. Another great thing about it is how easy it is to make, especially if you use a store-bought graham crust. Simply mix a can of pumpkin puree with a pint of your favorite vanilla ice cream and add a dash of allspice, cloves, nutmeg, and allspice. Then pour into your crust, add a layer of whipped cream, and place in the freezer. What a wonderful treat! It&#8217;s not nearly as heavy as pumpkin pie and just delicious.</p>
<p>Fruitcake is a strange phenomenon in the hierarchy of holiday desserts. They have a terrible reputation, most of them are sweet enough to cause diabetic shock in healthy people, and yet they are a beloved symbol of the holiday season. Fruitcake is a dessert in desperate need of a makeover! So instead of a heavy, overly sweet cake made with candied fruits why not something really different? How about a heavy, chewy, dark bread studded with fresh fruits? Or denser oatmeal bread baked with caramelized fresh cherries, coconut shavings, and pineapple would be delicious. It could be covered in white chocolate cream cheese icing. True, it won&#8217;t have the staying power of traditional fruitcake but people will actually eat it.</p>
<p>There is another fruitcake update that is delicious, but requires some dexterity. It is referred to as fruitcake sushi. You&#8217;ll need phyllo dough, and a variety of fresh fruits that have been finely chopped. Roll the fruit mixture into the phyllo dough. It should resemble sushi where the seaweed is on the outside. Bake very quickly in a hot oven. Cut into rounds. Place a tear shaped dollop of white chocolate icing on the top of each round. So delicious, and a lot of fun to eat.</p>
<p>Can you ever have enough holiday cookie ideas? Not me! I like to bring a variety of cookies to different holiday events - whether it&#8217;s the office party, the neighborhood gathering, or the family dinner. A friend shared this old style recipe with me that I was originally reluctant to try. First, mix up a batch of rolled oats, flour, butter, salt, allspice, and brown sugar. Layer this mixture into a baking pan or ceramic baking dish. Here&#8217;s where it was odd for me - you then add a layer of mincemeat on top! Follow that with a layer of roasted pecans and bake for about forty minutes at 350 degrees. It turns out this is quite a tasty dessert treat! Once it cools, cut it into squares for individual servings. </p>
<p>We all want to see our favorite holiday desserts on the table. It&#8217;s only natural! Tastes (not to mention nutritional standards) do evolve over time, though, and it is important to let our favorite desserts evolve with them. These are some suggestions for easy ways to reinvent holiday desserts, so use some of these ideas (fresh ingredients for canned, different methods of preparation) to update your family must-have holiday desserts.</p>
